It does show a few different things unexpectedly, so it is kind of easy to miss if you don't know it's there. It also blends into the background a lot.

It took me a while to figure it out. I never really used it in gunfights because I was so focused on the action. I played around with it while hunting, and now there really are no gunfights. Good use of dead eye means you kill most of your targets before they even draw on you.
Practice with animals (also helps you get perfect pelts) if you're having trouble. Birds are great for it if you can spot a group. At the very least, you don't have to worry about being shot at.

@GMak81 there's an app for RDR2 that (if I understand correctly) allows you to display all that extra crap on you phone or other device.
You can also hide the minimap by holding down on the d pad (or expand it if you so desire).
First person is VERY immersive.

Have you checked the stable?
ALWAYS MANUALLY SAVE. I manually save the game after each kill. I save it again after I put it on my horse. I save again (several times) on the ride to sell/donate it. I save AGAIN after selling/donating it.
Same goes with other activities. You can never save too much. Prevents a lot of issues like this one from really being issues.
