How can I make a wild horse my own since I cannot enter a stable or remove saddle in online mode.

There is no head in my game, just a stick. Rockstar last recommendation was to reset my PS4 which I will not do because of this issue. -
I'm in Germany, and just had the same problem. Anybody came up with a solution yet or will we get to wait for a patch?
