White Arabians sell for a good amount and I would also like to have a couple of spare. I already have one but is it possible to get multiple or will they not spawn if you only have one

I do not want to rush through the story so I want to find some fun things to do. I've thought about hunting legendary animals but I'm only chapter 3 so I don't know how many I can hunt. I've already found a white Arabian. What are some things I could do?

Someone spoiled red Dead redemption 2 for me and told me that my horse dies at the end. I just got a white Arabian and I really don't want to lose it. Should I just stable it away and use my backup horse or should I just risk it.
