Yes and no. Another player could steal your carcasses if you're using a stolen cart/wagon and you could risk losing those carcasses if you get too far from the cart/wagon. However, the carcasses won't show up on other players mini maps so most will never even know they're there. Other players won't be able to steal from a hunting wagon though.
