I've ridden most of the horses in the game and the best is probably the Turkoman. The Arabians are fast and extremely agile but are very skittish. Actually, my favorite horse is the Brindle Thoroughbred you can buy for $450. 7 speed, 5 acceleration and is not a total coward. Instead of buying the horse, however, I stole it from the female NPC who will challenge you to a race in Lemoyne. I actually have stolen the horse from her twice and keep one of them stabled.
