When you do that you can see them in the satchel upgrades for the specific satchel that requires that kind of pelt

What is the point of skinning animals that aren't a 3 star or legendary? Unless I'm missing something, it seems pointless to do. I love hunting, and I like seeing how many pelts and bodies I can pile on my horse but what's the point? Is there a place I can store them or use them for something?
