For everyone that lost their special edition horse or warhorse, you should check if your horse was replaced by Tennesee ranch or not. If yes, then Rockstar suggest to put the Tennesee back to stable and change to other available horse, then the DLC horse should reappear in buy horse for free. That works for me

In case for me, my thoroughbred available to buy again in valentine after some time, not immediately. However, my thoroughbred not dead, but changed to tenneesee after I died. Rockstar support has acknowledged this, hopefully they will fix this soon

Well, after doing some missions. Back to valentine, turn off the game. And play again, go to the stables, suddenly Thoroughbred pop up to buy for free. I guess this is a bug that needs to be fixed soon. As I don’t want my horse to be swapped with tennesse again

It seems not happening to all, my friends ride the same thoroughbred and he died multiple times while on horse or on foot, and the horse never gone missing. But mine seems gone completely with no trace of getting it back through any means.

I am having the same question here, I have the ultimate edition. And when I ride my thoroughbred, got into gunshot and dead. After I revived, the horse missing, back to camp and the first horse (tennesee) become my main. Gone to stable, and its gone, not even show up at store.
