What is the most fun daily challenge you've done?

This question is not for anyone to moan and groan about the dailies you/we hate. I'm interested in the ones you like. 

For my money, it was shooting hats off of NPCs. if you nick them, they're dead and it doesn't count. I like that it can go a lot of different ways: gunfight,  piling-on XP head- shooting sheriffs., hogtie, loot and dispose of the bodies in 'creative' ways. Bonus: it is an opportunity for you to sharpen your skills for  long range sniper shots with your rolling block, carcano or bolt action. A scoped .22 can even be fun: Melon-Busting with my Rabbit Popper after the first shot flies that hat.

The easy ones that I can knock off quickly. Do 3 - 4 in an hour. Collect plants, shoot birds, animals etc.
