How I I give the ingredients to Pearson for cooking, like sage, wild mint, etc? Also, how do I use the cans of coffee in my list of provisions?  Thanks in advance!!

You need to buy a percolator from the store, once you have it you get an option by any fire to "pour". As for the ingredients if it's an item request just press LT/L2 then "give request", otherwise just sell it to him at camp.

You can also setup a campfire anywhere to craft those items yourself if you have meats for it. Just open your weapon wheel with LB/L1 and hit RB/R1 to switch to the page that has it on the bottom of the wheel. The coffee pot will be there as well.

Button tips on the screen show you how.  Lower right corner. 

Don't need to target Pearson, just walk up to the table and press Right on the DPad to sell/donate, or X i think it is to craft things with what you've sold/donated to him.

Thanks everyone 😀 I might have not explained quite correctly what’s going on-when I go up to Pearson and try to donate ingredients like those spices it says he doesn’t accept them or something like that and they are frayed out-that’s what I need help with, so he can make better tasting food 😀

You're actually a better cook then Pearson. Only your character can craft recipes that include mint, oregano and thyme. You do this at a camp fire, going to your meat, and scrolling to the right with the D pad (except for gamey meat I believe). You can upgrade Pearson's supplies though through the ledger which has him produce better stew to grant you bonuses on health, stamina and dead eye.

Yep, also keep a few on hand as one of the camp ladies asks for spices.

Ok-I thought I was able to give him those ingredients to cook with-if I understand correctly, I can actually use them to make food better when I’m at a csmpfire?

Correct, when you're at your camp, hit X (on the xbox) to craft.  then on the food items where it lists Big Game, press left or right on the Dpad, then you should see like Thyme or Oregano Big Game.  The different spices give you different boosts, like a gold health core for a while from Oregano, or gold Dead Eye core from Thyme when you eat it.
