How can you tell if you missed a camp item side quest?

I don't think there is a way, but IIRC only one camp request is needed for the trophy and none of them are needed for 100% completion.

 

AFAIK, the only one with a reward that actually persists throughout the game is Pearson requesting a rabbit pelt to make Arthur a jacket (one of several I've never been able to trigger . . . maybe because I just spend too much time away from camp?). The rest just net you things like food, medical supplies, and ammunition.

i have another issue: i have the compass for pearson (from the braithwaites' boat house), but he never asked for it. and i think i also have something for mary beth (a pen?), but again, she never asked.

I don't know about Pearson, but Mary-Beth's pen request can sometimes be triggered by reading her notebook found at the back of one of the wagons where the women hang out, wash clothes, etc.

i hope youre talking about chapter 4, because if that only works in chapter 2 or 3, i'm screwed, and she'll never get her pen.

I honestly don't remember which chapter I was in last time I completed this request.

so i have to catch mary-beth writing in her book? i hope she does that in chapter 4. and yes, i got the right pen.

pearson's rabbit: i think i've done that one. but i'm not sure. gotta check if i have that jacket...

Unfortunately, not even the official strategy guide gives any insight as to how and/or when camp requests are triggered.

Thanks for the detailed tips! It's always tricky timing those camp requests in RDR2, especially for that Errand Boy achievement. I had no idea about the poker table trick to get Pearson’s compass request—that’s a good catch.
