Certainly at the moment it feels a bit rough. But Clay, the horse thief, says that he will buy horses off you when they are "up and running". I would also hope that robbing stores and NPCs will come in to play. Because it is beta and therefore limited, this may explain why it feels rough right now. It may not, maybe they really are setting it up to be "Hey, everything's crap unless you buy gold." I would like to think that is not the case, however. Also: Birds. Condors, Herons, Turkey Vultures. Shoot everything that flies. Sell the feathers.

I deleted my level 15 to remake her. Least this time I'm happyish with the result.

I think the issue is the single player gave us an idea of what we'd be able to create with the tools, so when you get in to the editor it feels pretty bad. It takes a decent amount of effort to create a 'unique' looking character, be it attractive or intentionally ugly or what have you. Most folks I've played with all look the same except for hair and facial hair. It'd be grand for it to be a bit better but I'm not holding my breath. Guess I'll delete my character and start over, seeing some of the results people are getting has inspired me.

I found using face 11 for female made a reasonable looking lady, but yeah, compared to the characters in single player, Murfree R Us.

Sounds like your hides or horse bugged out. Butcher will buy them, usually. I like the other players interrupting my mission. Had an awesome chase with me driving a wagon with a rescued prisoner while two players and half a dozen lawmen chased me. Ended up running him to the end after they shot my horses. Heart was racing! I've had my Arabian die a few times, it is unusable for a bit but visiting the stables brings it back. Unsure if that is intended or a bug, though. My main thought so far is: how do i be an outlaw? Can't rob stores. Can't rob the train. ( I even drove the train TO the station to try pick people up, no go. ) No bandana ( so, so sad about this ) can't rob townsfolk or strangers, have to kill them to loot. Can't steal stagecoaches to sell and I haven't found one with decent loot yet. Homes you can enter have barely any items and so far it is significantly more profitable to fist fight in Saint Denise than to clear bandit camps.
