If I, in the middle of the map, wants to run around robbing people, stealing wagons and sell them, what will then happen to my horse. Will it just stay put or does it return somewhere?

From what I understand, it remains where you left it and will be represented on the map. However, if it does respawn somewhere, I believe it will respawn at any stable. 

Note: I have not done this myself, this is information gleaned from related posts of horse behavior.

If you fast travel I.e take a train it will follow you can be in the next stop you arrive at. If you left it really far away you can always go to a stable and you will be able to pick it up there.

No, plus if you die it will respawn with you.

Always fast travel, or die near your horse. NEVER leave it behind, or you will have to steal another horse to get it, or hope your near a stable.

If you've upgraded your camp you can call your horse back from wherever it is too

Oh yeah, and that too. It's funny because when I was playing the story, I never donated to the camp, except for like 2 times the entire game.

Yeah, didn't really care about all of that, didn't care to decorate the camp either, I just wanted to focus on the story.
