You must have sold a regular buck's antlers, because I don't think the items required for trinkets can be sold.

There are three fences: one in Emerald Ranch, one in Rhodes, and one in southeast Saint Denis.

Bear in mind that Fences only become available as part of the story-line, so it makes logistical sense to progress to a certain point before you go hunting for other items.

This is one of the key aspects of the game that you only really get from playing the game over.  Items and enhanced skills are unlocked as part of the story line, which makes the other activities and challenges easier (or in some cases, possible).  Finding the best balance between story-line and open world is the most rewarding aspect of the game.
