First time ever playing RDR2, on Chapter 2: is it normal to feel like a complete moron playing this?

Just completed my first bounty, and after dropping Benedict off the cliff no matter how hard I try to keep him from doing so, chasing him down the river, and then trying to lasso him and failing because I keep hitting R2 instead of L2 and then R2, shooting him by accident, then beating the crap out of him by accident; then finally hogtying him and getting him back to the Sheriff’s office only to discover those goddamn additional challenges I could have done to get gold, and I feel like a moron. I’m stumbling through this game trying to learn it and getting through by sheer dumb luck. Is that normal for this? VidMate Mobdro word counter

It gets better once you get used to it. I did a ton of wrong things like you early on. Just take you time, explore and don't rush through the missions. Things get much easier with better stats and equipment.

Benedict Albright always jumps off the cliff, it's scripted. So don't sweat over that. Treat your first playthrough as an exploratory one to learn the game and don't worry about things like 100% completion until a later one.

But what "additional challenges" are there to the Albright bounty? That's news to me.

It does take a while to get used to the controls and the game play.  Once you get it, the gameplay becomes far more rewarding.  I managed 100% on my third playthrough which is where I found the right balance between exploration and story missions.
