The carcasses themselves, if small enough to be carried, can be sold for a pretty good amount, too. -

The buck antler trinket only has a 10% chance of doing that and won't do it all the time. Shooting an animal more than once will always downgrade it to 1-star. It probably sank. That does suck, though. Bait doesn't work in RDR2 the way it did in RDR1. Rather, you find the animal you're looking for first, then place bait in a spot you want to lure it to.

Yeah, I believe you have to have done something or other in GTA Online to get it. IGN has an article claiming that you only need to have an active GTA Online account to get it, but I'm pretty sure that's wrong since I do have an active GTA Online account and yet said hatchet has never spawned for me (there isn't even a spot for it open in the weapons compendium for it in my game). For a little bit of hilarity, scroll down on that IGN page and read the comment there. Apparently, anyone without this one single weapon doesn't have the full game available to them. ๐

You don't, it's basically just something to do (which, honestly, I don't mind). There isn't even a trophy attached to getting all upgrades, surprisingly. -
Most of the Stranger missions carry over to John, including the rock carvings and dinosaur bones (there are a few dinosaur bones in New Austin, which Arthur isn't supposed to access due to the Van der Linde gang being wanted in the southern part of West Elezabeth and New Austin). The only one that doesn't, which I'm aware of, is The Mercies of Knowledge which triggers during Chapter 4.

You can do both. Pearson can craft camp upgrades and new satchels and the trapper can craft clothing and saddles. -
A couple always spawn on the north end of one of the large islands to the west of the Clemens Point. I think it's the one directly south of the one with the shipwreck on it. But you have to be quick, because they spawn hidden in the vegetation. And use the bow with small game arrows, because the varmint rifle will always drop them to two stars. If you have the deer trinket, there's a small chance a two star will be upgraded to three when you pick it up, though. Edit: And approach the spot from the south, because they always fly northward when startled.
