Pearson will only take pelts for crafting that are needed. So unless your elk pelt was a perfect elk pelt then he will have taken it as funds for the camp. 

Only perfect 3* pelts are any good for crafting. 

But if they are perfect then you can give them to Pearson one by one or many at a time until you have enough to upgrade the satchel. 

You also have to buy the leather workings tools from the ledger for $225 before Pearson is even able to craft anything.

I have never had a pelt deteriorate... I always just throw them on my horse as I go.

The carcass will, but not the pelts (unless I'm totally oblivious which isn't exactly unbelievable).

Nope you're right.  carcasses will eventually decay and fall off your horse, if i recall it's 2 days.  hides won't.  I've ridden around for well over a week in game time and the hides were still perfect when i turned them in. 

Also, if you kill an animal, then run back to your horse (cause it's being stupid and won't come when you whistle) and the paw print of the kill goes off the mini-map. it will be decayed when you go back to get it.  Had that happen twice this weekend trying to get the last 2 perfect deer i needed.

It's different between Pearson and the Trapper.  Different inventories.  

If you donate to Pearson in camp, it stays in his inventory until you try to craft with it.  Bearing in mind that only Perfect Pelts are usable for crafting (i.e. 3-star), any other pelt is simply donated for credit or sold for cash.

The Trapper keeps a separate, independent inventory from Pearson.  If you want to prioritize satchels, donate perfect pelts to Pearson.

If you are prioritizing clothing upgrades/options, you should focus on donating to the Trapper.
 

What we really need is a spreadsheet that shows which perfect pelts can go to whom for crafting, because there's SOME overlap, but many of the items needed to craft are different.

I made one. but i can't attach it here,  doesn't accept xlsx files.

I was under the impression that they lose value over time if you just keep them on your horse. I read this online elsewhere. Now I don't know what to believe. How long have you had a pelt on your horse for and noticed no changes?

Can't say for sure because I was doing a lot of hunting for a while (and you're making me second guess myself)...

I know it's been at least a few days in game since I've sold any pelts and all I had left were perfect (wanted to bring them to Pearson but I haven't gone back to camp in a LONG time) so I'll check at some point.

3-4 days easy, if not more. I just couldn't be bothered to travel all the way to a trapper because I didn't need it for anything and I sure didn't need the $1.50 for the pelt. The only reason to hurry up is that you lose the pelt if you die.

over a week in game time.  This past weekend i was working on perfect hides for the Legend of the East satchel,  I spent 5 nights (camping through the day) hunting the badgers to find a perfect one.  then ran up to the northwest to find the cougar, spent a few days up there, sometimes camping during the day sometimes spending all day killing everything in sight to sell the hides and then hunting at night for the cougar.  After 3 or 4 full nights of hunting in game i gave up.  I did happen to get 5 perfect wolf hides and probably that many good ones while out there.  So 8 or 9 in game days and the perfect badger i got at the beginning of it all was still perfect when i gave it to Pearson.
