Figured this might be helpful to some.  The list of challenges and what i did to complete them so far.  I haven't done them all so chime in and i'll add your tips to the list.

Master Hunter

  • Skin 3 Deer

Really simple, kill 3 deer and skin them.  Don't recall but i think the 2 deer in the very beginning with Charles count toward this.

  • Collect 3 Perfect Rabbit Pelts

Scope the rabbits first, it will tell you what grade they are by 1, 2, or 3 stars.  Kill the 3 star rabbits with the varmint riffle or small game arrows with a headshot.

  • Track 10 Different Animal Species using binoculars

Took me a bit to figure this one out.  You have to spot the animal, then hold down RB/R1 to study the animal, and then press Y / ▲ to track it (watch the tool tips in the bottom right corner)

  • Get a Clean Kill 5 Times

For this you have to use the correct weapon for the animal.  Easiest i found was to use the varmint rifle on the billions of rabbits in the map.  Headshot is a clean kill every time.

  • Skin 3 Black or Grizzly bears

Couple places you can do this.  I find bears a lot up in West Elizabeth, between Little Creek River and Lake Owanjila.  I can find one every time i visit the trapper in that area, usually just a little bit south or southwest of his camp.  Always one across the creek that feeds Lake Owanjila also.  Usually grizzly there and it scares the crap out of me every time.

  • Kill 5 Cougars with a Bow and Skin Them

This one took me the longest.  Only place that i could reliably get a cougar to spawn was in West Elizabeth up near the Trapper, where the road starts to turn away from the creek that feeds Lake Owanjila, just after night fall, or early morning there'd be a cougar on the first hill to the right.

  • Use Bait to Lure and Kill a Herbivore and a Predator consecutively

Missed the key term "consecutively" when i started this on.  I'd bait and kill a herbivore then go off and kill some other stuff, then bait and kill a predator but the challenge wouldn't complete.  Kill one then the other, i did the predator and then the herbivore.  Wild Boar are predators, and they'll always come to bait if they're in the area.  Bunch of them in the same area of West Elizabeth as the cougar challenge above.  Then i rode north to the clearing near Little Creek River, lots of deer and pronghorn and elk up there. 

  • Catch 3 Fish Without Using the Fishing Pole

Since i'm already in the area, i tried killed fish with dynamite in Lake Owanjila.  Didn't work out to well.  Got 1 that way, but i just happened to see the carcass paw print on the map about 40 ft away.  Dynamite blew it out of the water.  Couldn't get it to happen again, or maybe i could find them rather.  So i went up to the stream that feeds Lake Owanjila, there's a number of salmon in the creek you can shoot with any gun and they'll drift to the side of the stream for easy pickup.

  • Kill an Opossum playing Possum

Pretty simple.  Bunch of Possum in the area i've done all these other challenges in.  Ride around in the trees at night just south of the word BIG on the map for Big Valley.  Bunch of 'possum there.  Ride near them a couple times and they'll play possum, shoot em dead then to complete.

  • Kill the Legendary Panther

If you've hunted for the perfect panther hide for the Legend Satchel, you'll know how this goes.  Legendary Panther is just east and north of where the regular panther are, which is just south and east of the abandoned church in Bolger Glade.  When you're in the spot you'll get the legendary animal tip (doesn't show up until you're on this challenge).  I grabbed my bolt action rifle with express ammo, crouched down and started tracking the panther.  Then i wet myself (almost) when i heard him and died with his fangs in my throat.  If that happens to you, you have to wait about 3 days in game, and try again.  This time I followed the tracks, heard the panther and hit LT/L1 to sight the rifle in, then immediately hit A/X to dodge.  Then LT/L1 again and start Dead Eye, look at your mini map to see where the Panther is, he'll be a red dot.  Spin to him and open fire.  I got lucky with a headshot.

Horseman

  • Kill 5 Rabbits While on Horseback

Okay so call me stupid but i thought this meant run down 5 rabbits while on horseback.  So it took me a bit to get this one done.  I had 3 run down, got pissed at #4 and 5 and shot them, challenge complete.  So just shoot the damn rabbits and do it the easy way.

  • Jump over 3 obstacles in 15 seconds

Pretty simple, find 3 things to jump and jump all 3 in 15 seconds or less.  I found 3 boulders along the Dakota river and jumped those. 

  • Ride from Valentine to Rhodes In Less Than 5 Minutes

This one can be tough.  You need at least a race horse fully bonded with you to even try it.  Start just inside the dotted lines surrounding Valentine, haul ass down the railroad tracks to Rhodes.  I did this one twice from restore save points.  First time i did it in the evening, second time in the daytime, had to dodge a train in the daytime.

  • While Mounted Drag a Person for 3300 Feet using a Lasso

Wear your bandanna if you don't want a bounty.  First time i lasso'd the preacher guy just south of the stage coach in Strawberry and drug him.  Watch out for trees and wagons, they'll break your rope and make you start over.  2nd time i lasso'd some lone horseman and drug him.  Don't drag them down the roads, you'll get accused of assault and then murder (guy dies while you're draggin him) by everyone you pass by.  

  • Trample 5 animals while on horseback

I had practice with this from the first challenge.  But then i thought, instead of looking for rabbits and such, wild turkeys run around in groups of 3.  And the're really easy to trample.  You have to be at a canter or lope for this at the least, I didn't get credit at a trot.

  • Ride from Strawberry to St. Denis in Less Than 9 Minutes, Without Touching Water

Key to this is not touching water.  Don't do it in the rain, or just after when there are standing puddles.  Go to the stables just southwest of Strawberry and buy the horse services for $5.  You'll get gold cores for 24 hours.  Buy a few potent stamina shots for the horse also.  You can do it without but i found it helped on the bridges.  Ride into strawberry, just inside the dotted line town border.  From there head east and south to Riggs Station.  Ride along the railroad tracks to St. Denis.  I found doing this at evening/night had less or no trains.  However i did run into Leymoine Raiders robbing a train i had to detour around.  

  • Kill 7 Enemies from Horseback, Without Dismounting

Getting shot at and having your horse throw you counts as dismounting.  I rode through the oil refinery, shot 1 person and the rest turn into enemies and come at you.  I rode away leading the few on horseback and shot them, got a bounty on my head at that time so rode back into the red circle and waited for the bounty hunters, killed the 3 that came, then rode off,  found a lone horseman and drew down on him to turn him hostile and then killed him for the 7th.

  • Kill 9 Predators from Horseback

Fairly simple.  I went back to my hunting grounds in West Elizabeth.  Boar count as predators, and then i killed a group of coyotes to finish this one off.

  • Ride From Van Horn Trading Post to Blackwater in Less Than 17 Minutes, Without Touching Water

This includes rain, puddles, everything wet! Also you can't fall off your horse. Map out your bridges and before starting. I recommend going south of Van Horn and crossing the first river at MacLean's house by Bluegill Marsh. Head west and follow the tracks that take you to Flatneck station. From there cross the bridge by Riggs station and head north. It is out of the way but you need to use the Owanjilla Dam to cross without touching water. Then just head to Blackwater. - dropkickennedy

  • Break Every Breed of Wild Horse

Not bad. Just follow the location of where horses are located online. Spot horses with binoculars in the distance to determine breed. - dropkickennedy

Gambler

  • Win 5 hands of Poker

Fairly Simple i thought.  What i did was bet high on the pre-flop (the deal) then high again on the flop (the first 3 cards turned over)  all but once i got called, but luckily i won that hand too.

  • In Blackjack, double down and win 5 times

Simple enough.  I doubled down every time i need to hit.  Took me maybe 15 - 20 hands to complete.

  • Win 3 games of 5 Finger Filet

Another easy one.  

Game 1 round 1 was A+B, just tap that over and over and you can get 9 laps.  Round 2 was A+X 

Game 2 round 1 was A+B+Y, B 3 times Y twice.  (A+B+A+B+A+B+A+Y+A+Y+A).  Round 2 was A+B+X

Game 3 round 1 was A+B+Y+X+Y+B, Round 2 was A+X+Y+B+Y+X

  • Bust one poker player out in each location

You have to win all the chips from 1 player in Flatneck Station, Valentine, and St. Denis.  Took a while for this one.  I waited till i had a good pocket pair, faces cards or aces, then bet high and someone would always go all in.  

  • Win 3 rounds of Dominoes with out drawing any tiles against 2 or fewer opponents.

Just what it says, win 3 rounds without drawing any dominoes from the table.  You can do this without winning the game.

  • Beat the Blackjack dealer in two locations

There's only 2 locations, pretty simple then, just win once in Van Horn and Rhodes

  • Beat the 5 Finger Filet Opponent in each location

Win the game once (2 rounds) in Strawberry, Van Horn, and Valentine

  • Win 3 hands of Blackjack with 3 hits or more

You gotta hit 3 times and not bust.  This took me a while, had to wait till i had low count then hit 3 times swear at the TV a lot.

  • Win 3 games of Dominoes in a row

Not as bad as it sounds,  took me 9 games to finish this one.  I won 2 then lost, won 2 then lost, then won all 3.  I like to play at Emerald Station, i don't like the 5's version of Dominoes.

  • Win 3 Hands of Poker in a row.

 

Sharpshooter

  • Kill 3 flying birds

Really simple, equip the repeater and start shooting down birds.

  • Kill 2 different animal species in one use of deadeye

This one took a bit.  I finally got it while hunting up in West Elizabeth.  I killed a rabbit and a squirrel.  Make sure the 2 animals are near each other.  If you have to turn so one leaves your vision area it removes the dead eye mark.

  • Kill 5 Flying Birds from a moving train

No matter what you shoot, you're gonna get accused of a crime shooting form a train.  Those damn guards can even hear the bow from 4 cars away.  I rode the train from Emerald Station, waited till a large flock of birds flew over and blasted them out of the sky.   Start at morning so you have plenty of time to ride the train and wait for the large flocks, otherwise they'll stop the train after you shoot and you'll have to find another train and go again.

I ended up getting this one AFTER fighting off the law. First attempt, they stopped the train and tried shooting me. I rode off for a minute and came back to find a completely abandoned train. I ran up to the front (after looting of course) and got the train going again. Quickly hopped out and shot down 4 birds (already had credit for 1) with time to spare. Far less frustrating than having to find another train, but I got a HUGE bounty for stopping the train in a populated area. - @Truth

  • Kill someone from at least 80 ft away with a tomahawk

Trick to this is maxed deadeye and they have to be an enemy.  Build dead eye up to level 8 if you're low in the story progression like i am, make sure your ring is full and the core is full.  Then find someone that doesn't move, like the guard at the north gates of the oil refinery.  Target him with an advanced tomahawk, then walk backwards until the targeting dot turns white.  Step forward again so it turns red, then activate dead eye.  mark the guards head, then walk backwards until dead eye is almost gone (like the second before it expires) and throw the tomahawk.

  • Kill 6 animals without switching or reloading a weapon

Use the Lancaster repeater, it holds 14 rounds.  Run around and look for rabbits and other small critters that will fall with 1 repeater shot anywhere to the body.

  • Kill someone at least 660 ft away with a scoped rifle.

I used the Rolling Block Rifle with the long scope.  i first tried it from the cliffs at Twin Stack Pass.  2 horsemen riding down the road across the valley, shot 1, didn't count for some reason, the other one turned his horse into a pegasus, got footage of that and posted it here somewhere.  2nd try i switched over to the cliffs of Citadel Rock and shot from there to finish the challenge.

  • Get 7 headshots in a row

Simple, just ride around on the roads shooting people passing by in the head,  took me like 15 minutes maybe.  If you get a wagon you can get 2 or 3 if someone is on the back in quick succession.

  • Disarm 3 opponents without switching or reloading a weapon

This was a tough one and my one buddy is still having issues with it. I would recommend using the Lancaster. IMPORTANT: You can only dead eye once for the first shot. If you dead eye a second time, this automatically reloads your gun which starts the challenge over. Shoot a person in the hand/arm they are holding the gun. - dropkickennedy

  • Shoot 3 hats off people in the same dead eye.

You have to have the ability to shoot multiple times while staying in dead eye to complete this. I believe this ability is unlocked after level 4. Once you can do this head to Valentine. There are usually 3 guys clustered outside the train station with big hats waiting to be shot off - dropkickennedy

Much easier to do after the chapter 4 upgrade to Deadeye, that allows you to stay in deadeye after the first shot.  Don't mark the hats, that will kill the person wearing it and void the challenge attempt.  I did this last night in Van Horn saloon.  I found 3 guys with cowboy hats near each other (at the blackjack table).  ate some Thyme Pork to get a gold dead eye core, then drank a potent miracle potion to get gold rings.  Aimed at the first guy, activated dead eye and shot the 3 hats.  Note that this will turn almost all the people in the saloon into enemies.  You'll be in for a good gunfight after.

  • Kill 3 flying birds with 3 consecutive scoped rifle shots

Just have to be patient with your aim - dropkickennedy

Did this one last night also.  I rode in the Blue Water Marsh, figured I'd use the big waterfowl for easier shots, and i needed more Heron plumes, so i could work on both at once.  Took me 2 tries as i'm not as steady as i used to be ;)  but shooting those big birds is much easier than trying to take out the crows or ravens or ducks in other areas.

Survivalist

  • Catch 3 bluegill

you can do this on Flatiron Lake easy enough.  Use cheese.

  • Hand 5 animals into Pearson or a Trapper

I turned in 5 rabbit carcasses.  Not sure if you can just turn in hides.  Doesn't matter the carcass quality either.  I shot 5 with the repeater to make it faster, you can carry 2 on your horse at once.

  • Kill five animals with a varmint rifle

Easy enough, kill 5 rabbits or squirrels since there are millions around the map.

  • Craft Dynamite, Improved, Fire, Poison, and Small Game arrows

1 of each is all you need.  You can get the patterns for all but the dynamite at the fence (maybe get it later in the game?)  You can find it under a bridge just on the south edge of the indian reservation north of Fort Wallace.  There's a burned down building off to the left of the road, and a bridge beside that with a lockbox under it and the pattern inside.

  • Catch a fish in the bayou from a riverboat, while standing on the train tracks

That's not confusing at all is it?  Stand on the train tracks while in a riverboat?  WTF!?  Actually you catch a fish in the Bayou from a riverboat, there's one near the bait shop.  Then catch a fish while standing on the train tracks.

  • kill an animal while it's feeding on a corpse 5 times.

Had to restart this one since I restored my game.  Found you have to move locations and use a different corpse each time. I killed a deer, killed the hawk that flew in to eat on it, got credit.  Killed another deer not very far from the first didn't get credit for the vulture.  Killed a bunch of bounty hunters right there also, not one gave me credit when I killed the animal eating on their corpses.

Rode a ways away shot another deer, killed the hawk and got credit then.

  • Kill 8 small game animals with consecutive small game arrows

Tough because a dead eye arrow shot at a moving bird DOES NOT guarantee it will hit it. I found this easiest by traveling up and down the Dakota River shooting birds sitting still on the banks. Once they start flying, you risk missing. I would know. I had 7 and missed the last flying bird because I got greedy haha. - dropkickennedy

  • Craft a homing tomahawk, improved tamahawk, improved dynamite, and volatile fire bottle

Simple. If you don't have the recipes, just look them up to where to find them and ingredients.

  • Catch a fish that weighs at least 19 lb.

You can do this with the Muskies in Lake Owanjila.  Caught 2 while trying to get the legendary fish there.

If you still have legendary fish to catch, you can probably get this through those. If not, channel catfish and sturgeon are large. - dropkickennedy

  • Catch one of every species of fish.

Can't do this until you completed the game and it will guide you on what to catch. Just research locations and type of bait if you have any issues - dropkickennedy

Weapons Expert

  • Kill 3 enemies with a knife

Simple enough, provoke 3 people so they're hostile, or find 3 already hostile to you, and stab them to death.  Equip the knife and target them with LT and B to melee attack.

  • Kill 3 Enemies in 10 seconds using throwing knives

I got in trouble in Valentine, then hide up above the Sheriff Office, there's steps between there and the doc, take cover at the corner, then dead eye and head shot when the come out of cover to shoot at you. 

  • Kill 3 Birds of Prey using Tomahawks

Thanks to @BropolloCreed79 for tips on this one, where to find the birds.  I rode along the banks of the Dakota River, many different birds spawn on the boulders at the water edge and on the sandbars.  Took a while but i found my 3 birds there, 1 eagle and 2 hawks.

  • Kill 10 Enemies with a shotgun, using crafted ammo

Go to the oil refinery.  on the east side there's a small shack with a guard near it.  Kill the guard, the go inside and take cover beside the door.  The other guards and whatnot will run up to the shack begging for you to blow them away.

  • Kill 5 mounted enemies with 1 throwing knife per enemy

Another easy one.  Find single horseback riders. antagonize them till they turn hostile, headshot with a throwing knife.

  • Kill 4 enemies with 1 stick of dynamite

Did this by rolling up on an outlaw small camp that usually has 4 or 5 bad guys -dropkickennedy

  • Kill four enemies in a row with the same tomahawk

Not sure if you need to, but I got rid of my other tomahawks so I only had one in my inventory to make sure I was picking up the same one after I threw it. Actually, I don't even know if you need to through it to kill someone? - dropkickennedy

  • Kill 15 enemies using a long barrelled shotgun

Simple, any shotgun will work except the sawed off shotgun.

  • Kill 9 unaware enemies from behind using the bow

Needs to be when they are turned around. Back of the head works. You can probably get 2 at a time when sneaking up on a bandit camp before they start shooting back. - dropkickennedy

  • Kill a grizzly bear using only throwing knives without taking damage

Use a poison throwing knife first then improved and just pepper that bitch

Bandit

  • Hold up 5 townsfolk

Find 5 people in town and target them and rob them. easy enough

  • Rob 2 coaches or return 2 stolen coaches to a fence

You have to unlock the fence in chapter 2 at Emerald Ranch to turn in coaches.  I tried robbing a coach but it didn't count for whatever reason for the challenge.  So i went to emerald ranch, waited for a wagon or coach to pass by, stole it and sold it, rinse and repeat.

  • Rob the cash register in any 4 shops in a single day

I might have found a glitch in this.  I started with the general store in valentine, but died escaping.  When i revived the general store was unlocked, so i robbed it again, then hit the doc, then the gun smith.  If it doesn't glitch the general store will be locked (greyed out) so you'll have to hit the other 2, then run to Strawberry and do the general store there.

  • Rob 3 Coaches or Sell 3 Coaches to a fence in a single day

Another easy one.  Only catch is the single day, but the fence is open for coaches 24/7, so no big really.  I would sit a little ways from Emerald Ranch and wait for someone to ride by in a wagon or coach and kill them, then drive the coach to the fence.  Make sure you're far enough away that if a witness reports the crime you can leave the red circle and wait for the wanted timer to expire, then go sell the coach.  You can't sell to a fence with the Wanted timer active.

  • Earn $250 bounty in any one state

Super easy.  Take off your mask/bandanna, ride over to the east side of the oil refinery.  There's a small shack there on stilts with 2 or 3 guards leaning against it.  Kill them, take cover in the shack and blast the lawmen and guards until your bounty is over $250.  Took me less than 5 minutes.  And you don't have to start from 0.  You can have an existing bounty when you get this challenge, then raise it over the mark.  I had a $400 bounty when i started it and it didn't trigger as complete.  I had to pay it off then raise the bounty up again.

  • Steal 5 Horses and sell them to the Horse Fence in Clemens Cove

You can't do this until you unlock the Horse Fence in Chapter 3.  Do the mission for the Braithwaite's after Dutch tells you to go to either the Greys or the Braithwaites.  After the fence is unlocked, I went just to the northeast of him to the dry creekbed and the small bridge over it.  I'd kill the single riders as they passed on the bridge, if they fell on the bridge i'd dump them over the side.  Then calm their horse and ride it or lead it to the horse fence.  You can only sell the horse you're riding or leading.

  • Rob $50 of cash and valuables from townsfolk

This one takes a while, you have rob a lot of people.  I rode around the roads and robbed every single horse rider i saw.  Usually ended up killing 2 out of 3 as they'd draw down and start shooting.

  • Steal 7 Wagons and sell them to the Fence at Emerald Ranch

Simple, self explanatory.  Camp out near emerald ranch and steal 7 wagons and sell them to the Fence.  First one i sold was the stagecoach in Valentine.  I just happened to be in Valentine when i robbed the last person to get the $50 challenge complete, ran to the stagecoach, used it as my getaway vehicle.  If you do that don't forget to whistle for your horse to follow you.

  • Hogtie someone and leave them on the tracks, 3 times

I would go find where the trains are at.  Lasso and hogtie someone and leave them on the tracks ahead of the train.  Then sit back and watch.  If you don't stay there the hog tied person despawns.  I had someone witness me put one on the tracks and had to chase the witness down.  Went back and the guy was gone and the train was just getting there.  You can move away but keep them in the minimap range.

Just found this out since I had to redo this one after restoring to a previous save.  You can hogtie a person, drop them on the tracks, then cut them free.  Lasso them again as they run away, drop them on the tracks again and it will count for the second one.  Tried this for the third but it didn't work. Might be a glitch it worked as the 2nd.

For the hogtie and leave em on the tracks, I didn't have to wait for a train to hit them, it only says to leave them on the tracks, so I guess it's enough to set and forget. - KRooKeD KRoW

  • Complete 5 Train Robberies without dying or being caught.

you don't need to rob the whole train.  In the first (baggage?) car behind the passenger cars, there are no guards, and there's a can of corn or mash or something that you can steal.  Since nobody has LOS on it, nobody see's you take it.  That one item is enough to be considered robbing the train.  You can get off and get credit for one without any fuss whatsoever.  Just take a train somewhere, stay on it, steal the can, and get off.  Repeat.  I had one time I got right back on the same train and stole something else, and it gave me credit for a second train robbed, but I was unable to duplicate that, so not sure how that happened. - KRooKeD KRoW

More to @KRooKeD KRoW's method.  It works :)  I started in Emerald station, bought a ticket for the train to Valentine.  When the train stopped I ran back to this car and stole the can of veggies or whatever.  Left the train and tried to go back as there was a tobacco can on another barrel.  Didn't get credit for that.  I waited till the train left, then bought another ticket and went back to Emerald Station (the cheapest ticket).  Did the same thing there, ran back and grabbed the can of whatever.  Did that 5 times, buying tickets back and forth between Valentine and Emerald Station, you sped like $15 in tickets but makes it really quick and simple to finish this challenge.

Herbalist

  • Pick 6 Yarrow

Yarrow grow all over New Haven.  Red flowers on top, remind me of a red daisy.

  • Pick and eat 4 types of berries
    • Blackberries - Near rivers in West Elizabeth and Ambarino
    • Evergreen Huckleberries - Southeastern, look around Bayou Nwa
    • Raspberries - Scarlett Meadows, found mine southeast of Rhodes.
    • Wintergreen Berries - Winter is the clue, they're up north, i found bushes around Manito Glade north or Annesburg

You can eat them as you pick them.  Hold Y to eat and X to pick.  

  • Craft 7 items using Sage as an ingredient

You can find Hummingbird Sage in the south of Scarlett Meadows, tallish plant with purple flowers growing up in a bullet like shape.

  • Pick 5 Mushrooms and feed them to your horse

I picked a few mushrooms, targeted my horse and pushed right on the D-pad to feed.  Stuipd shitehead ate a block of hay instead.  WTF?   Pick the mushrooms, then go to your weapon wheel, RB over to the horse tab, the left part of the wheel is horse food, change that to your mushrooms, then the horse will eat them.  You can do this with mushrooms you collected before the challenge also.  I had picked 2 mushrooms near the panther area, tried to feed them and failed.  Used the weapon wheel, fed those 2, then saw i had 5 more different mushrooms in my inventory already.  Fed 3 of those and got credit.

  • Craft 9 items using indian tobacco as an ingredient

This one took me forever.  i kept craftin the tonic that used 4 or 5 indian tobacco like an idiot.  The smart man would use the Potent Miracle Tonic recipe you get at the start of the game, which uses 1 indian tobacco.

  • PIck 15 different species of herb.

This is the one i'm working on now.  You can't pick raspberries and then use blackberries, have to be different species.

  • craft and use 5 special miracle tonics

To do this you need to have the recipe.  You can get it after the mission in chapter 3 "A Short Walk in a Pretty Town" or find it.  It's located on a plateau just south of the H and O in Vetter's Echo.  There's an old fallen down blood stained tent and the recipe is in a lockbox beside it.

Such a pain because you need to have 6 currant, 6 yarrow and 6 burdock for 1 tonic. Just look up the herbs location and harvest the hell out of them - dropkickennedy

  • Use Oleander to craft 6 poison weapons

Head to the large tomahawk looking island on the east side of Flat Iron lake to find them. For exotic bird meat, you can get this from pelicans. Head to peninsula under Van Horn where you get the boat to go bust John out of prison. You can usually get some there - dropkickennedy

Orchids

These are listed separately here because the orchids are also part of a bigger quest available after completing The Gilded Cage in Chapter 4. Head to a large ornate hotel and restaurant at an intersection just north of Saint Denis to find Algernon Wasp in a greenhouse in the backyard. As part of the quest Duchesses and Other Animals, he will ask you to gather several rare items, including the orchids.

Note that these can be collected before talking to Algernon Wasp but cannot be sold. Most can be spotted at eye level on trees—keep an eye out for vines leading up to the blossom. Many orchids can be found while hunting for Vanilla Flower. Keep in mind that using Eagle Eye will be less effective than with other plants; the white spores are not as strong and do not have as far of range, meaning you’ll need to be much closer to spot them.

Acuna’s Star Orchid

According to the Compendium, this plant “is native to the east coast of Bayou Nwa, Lemoyne” and has lovely cream colored petals. It can be found all over the bayou outside Saint Denis.

Cigar Orchid

According to the Compendium, “this type of plant can be seen growing upon other plants and trees in Bluewater Marsh, Lemoyne” and has hundreds of tiny fluorescent yellow flowers. It can be found mostly on the northeastern shore of Bluewater Marsh.

Clamshell Orchid

According to the Compendium, this plant “is native to Scarlett Meadows and Bayou Nwa, Lemoyne” and can be found growing on tree trunks and branches. It can be gathered largely in the western bay of the Bayou outside Saint Denis.

Dragon’s Mouth Orchid

According to the Compendium, “these can usually be found growing in wet lowlands across O’Creagh’s Run, Grizzlies East, Ambarino” and are about six inches long. They’re among the rarest of orchids, but take a look around O’Creagh’s Run in Grizzlies East and some of the surrounding areas.

According to the Compendium, this plant is “native to Bayou Nwa, Lemoyne” and grows mostly in shaded areas. Try the southernmost inlets and bays just below Caliga Hall outside of Saint Denis, on the Lannahechee River.

Lady of the Night Orchid

According to the Compendium, this plant “can be found growing upon tree trunks in its native habitat of Bayou Nwa, Lemoyne” and can be spotted by its white, heart-shaped flowers. It can be found all over the banks outside and across Caliga Hall, and on the western bay of the bayou outside Saint Denis.

Lady Slipper Orchid

According to the Compendium, “this type of orchid can be seen growing in the ground in forests, meadows and woodland areas like the Big Valley and Tall Trees areas of West Elizabeth.” Try the open spaces in the wooded areas of Big Valley.

Moccasin Flower Orchid

According to the Compendium, “there have been sightings of this orchid growing in Roanoke Ridge, New Hanover” and it can be found near pines and conifers. There’s specifically a large group of them outside Elysian Pool, to the southeast.

Night Scented Orchid

According to the Compendium, this plant is “is native to swampland areas and can be found growing in Bayou Nwa, Lemoyne” and can be recognized by its long tapered white petals. It can be found all along the banks of the Lannahechee River, south of Rhodes and the Braithwaite Manor.

Queen’s Orchid

According to the Compendium, “is native to swampland areas and can be found growing in Bayou Nwa, Lemoyne.” It is among the prettiest of the orchids, with bulbous purple and white curled petals. It is among the few orchids that can be found out in the open growing from the ground. Look for it all around the banks of Lagras Lakay outside of Saint Denis.

Rat Tail Orchid

According to the Compendium, these orchids “can often be found growing on rocks and along stream banks of Bayou Nwa, Lemoyne”, both from the ground and on trees, unlike most other specimens. The petals are white or cream colored, and are splayed out in a way that slightly resembles pine needles. A large group of the flowers can be found all over from Bluewater Marsh down to Bayou Nwa outside of Saint Denis.

Sparrow’s Egg Orchid

According to the Compendium, “the common habitats for these flowers are damp forest grounds and along stream banks across Roanoke Ridge, New Hanover” and they have a bulbous white center that resembles an egg. They can be found scattered all over Annesburg, north of Saint Denis.

Moccasin Flower Orchid

According to the Compendium, “there have been sightings of this orchid growing in Roanoke Ridge, New Hanover” and it can be found near pines and conifers. There’s specifically a large group of them outside Elysian Pool, to the southeast.

Night Scented Orchid

Queen’s Orchid

According to the Compendium, “is native to swampland areas and can be found growing in Bayou Nwa, Lemoyne.” It is among the prettiest of the orchids, with bulbous purple and white curled petals. It is among the few orchids that can be found out in the open growing from the ground. Look for it all around the banks of Lagras Lakay outside of Saint Denis.

Rat Tail Orchid

According to the Compendium, these orchids “can often be found growing on rocks and along stream banks of Bayou Nwa, Lemoyne”, both from the ground and on trees, unlike most other specimens. The petals are white or cream colored, and are splayed out in a way that slightly resembles pine needles. A large group of the flowers can be found all over from Bluewater Marsh down to Bayou Nwa outside of Saint Denis.

Sparrow’s Egg Orchid

According to the Compendium, “the common habitats for these flowers are damp forest grounds and along stream banks across Roanoke Ridge, New Hanover” and they have a bulbous white center that resembles an egg. They can be found scattered all over Annesburg, north of Saint Denis.

According to the Compendium, “the shrubs can grow in poor soil so locations like woodlands, hedges and hillsides make the perfect habitats.” They’re common enough to be found just about anywhere—keep an eye out for bushes with serrated edges especially in grassy areas outside the woods.

Blackcurrant
Can be crafted into Special Snake Oil

According to the Compendium, “they can be found growing in brightly lit positions away from water in Gaptooth Ridge and Cholla Springs in New Austin.” The bushes are medium sized with black glossy berries that can also be used for poison weapons.

Burdock Root
Can be crafted into Special Bitters

According to the Compendium, “they are found in the western side of the Great Plains region, particularly along the railroad tracks and river banks, sometimes near rocks and under groups of trees, but scattered about in general.” The river banks are probably your best bet; they can be identified by their low bushlike, grassy appearance.

Chanterelle
Can be crafted into Potent Herbivore Bait

According to the Compendium, “this type of fungi can often be found in grass areas, woodlands across Lemoyne, and the east of New Hanover.” They have yellow-orange domes and can be found in low-lying clusters, like the Bay Bolete.

Common Bulrush

According to the Compendium, “this plant can be found near streams and lakes in every region across America.” You can identify them by the cat-tails and broad grass stems; check near almost any bank near any body of water to find them.

Creeping Thyme

Use them in your cooking over the campfire for a Stamina boost.

As an ingredient in one of the most powerful tonics in the game, they are very important.

According to the Compendium, milkweed is a “popular plant that can be seen growing near the river banks of Bayo Nwa and Dewberry Creek in Lemoyne.” It can easily be found in the swamps outside of Saint Denis.

Oleander Sage

According to the Compendium, “the popular herb can be seen growing near the river banks of Bayou Nwa.” Try the outskirts of Saint Denis in the swamp areas, keeping an eye out for its bright pink-red flowers. Note that it can also be used for other crafted items as well, particularly Poison Arrows.

Can be used in the Oregano Plump Bird recipe

According to the Compendium, “this plant thrives in dry grasslands which makes it a popular plant across America as it can be found in most places.” True to description, it is one of the most common plants in the game and can be found just about anywhere. It can be used in cooking to increase Stamina.

Parasol Mushroom
Can be crafted into Special Horse Reviver

According to the Compendium, “this type of mushroom can often be found in well-drained soil and woodlands across America.” They are taller than other mushrooms, and paler, with a thinner and more delicate cap, and are common enough to be found in almost all areas of the map. According to the Compendium, “this type of plant requires cooler weather which makes the north of Ambarino a great place for this plant to flourish.” Look for its bright purple crocus-like blossoms among the trees on the edge of the snowline in northern regions.

Wild Carrot
Can be crafted into Horse Meal

According to the Compendium, “the durability of this plant means it can be seen growing across most regions of America, often along roads or in fields.” Wide open plains are your best bet, and the white clusters of tiny flowers at the top of the Wild Carrot’s long thin stems should be easy to spot even from horseback. These are very important for keeping your horse happy and in good health.

Wild Feverfew
Can be consumed to refill your Stamina Core

According to the Compendium, “this bush is native to Cholla Springs, New Austin, and is easily recognizable against the harsh soil.” It somewhat resembles a common daisy, with white little petals offset by a large yellow center.

Wild Mint
Can be used in the Minty Prime Beef recipe

According to the Compendium, “this plant is common to marshes, along streams and moist meadows which makes it a popular plant across America.” Its primary use is to season meats at the campfire and will boost your Health when applied to food while cooking. It can be found just about anywhere in the game.

Wintergreen Berry
Can be crafted into Potent Predator Bait

According to the Compendium, “shrubs can be found in woodlands and forests in the northern regions of Ambarino and New Hanover.” It has red berries and dark green leaves and a bush-like structure; look for them while hunting for Violet Snowdrop.

Yarrow
Can be crafted into Potent Health Cure

According to the Compendium, “this plant can be found in grasslands and open forest areas in New Hanover and Lemoyne.” It is recognized by its tall thin stems and deep red flowers.


Orchids

These are listed separately here because the orchids are also part of a bigger quest available after completing The Gilded Cage in Chapter 4. Head to a large ornate hotel and restaurant at an intersection just north of Saint Denis to find Algernon Wasp in a greenhouse in the backyard. As part of the quest Duchesses and Other Animals, he will ask you to gather several rare items, including the orchids.

Note that these can be collected before talking to Algernon Wasp but cannot be sold. Most can be spotted at eye level on trees—keep an eye out for vines leading up to the blossom. Many orchids can be found while hunting for Vanilla Flower. Keep in mind that using Eagle Eye will be less effective than with other plants; the white spores are not as strong and do not have as far of range, meaning you’ll need to be much closer to spot them.

Acuna’s Star Orchid

According to the Compendium, this plant “is native to the east coast of Bayou Nwa, Lemoyne” and has lovely cream colored petals. It can be found all over the bayou outside Saint Denis.

Cigar Orchid

According to the Compendium, “this type of plant can be seen growing upon other plants and trees in Bluewater Marsh, Lemoyne” and has hundreds of tiny fluorescent yellow flowers. It can be found mostly on the northeastern shore of Bluewater Marsh.

Clamshell Orchid

According to the Compendium, this plant “is native to Scarlett Meadows and Bayou Nwa, Lemoyne” and can be found growing on tree trunks and branches. It can be gathered largely in the western bay of the Bayou outside Saint Denis.

Dragon’s Mouth Orchid

According to the Compendium, “these can usually be found growing in wet lowlands across O’Creagh’s Run, Grizzlies East, Ambarino” and are about six inches long. They’re among the rarest of orchids, but take a look around O’Creagh’s Run in Grizzlies East and some of the surrounding areas.

Thanks for putting this together man! I have added to the ones you did not get to yet. Hope this helps! (Also excuse any typos or grammatical errors. Typed this up quick)

  • Ride From Van Horn Trading Post to Blackwater in Less Than 17 Minutes, Without Touching Water
    • This includes rain, puddles, everything wet! Also you can't fall off your horse. Map out your bridges and before starting. I recommend going south of Van Horn and crossing the first river at MacLean's house by Bluegill Marsh. Head west and follow the tracks that take you to Flatneck station. From there cross the bridge by Riggs station and head north. It is out of the way but you need to use the Owanjilla Dam to cross without touching water. Then just head to Blackwater.
  • Break Every Breed of Wild Horse
    • Not bad. Just follow the location of where horses are located online. Spot horses with binoculars in the distance to determine breed
  • Disarm 3 opponents without switching or reloading a weapon
    • This was a tough one and my one buddy is still having issues with it. I would recommend using the Lancaster. IMPORTANT: You can only dead eye once for the first shot. If you dead eye a second time, this automatically reloads your gun which starts the challenge over. Shoot a person in the hand/arm they are holding the gun.
  • Shoot 3 hats off people in the same dead eye.
    • You have to have the ability to shoot multiple times while staying in dead eye to complete this. I believe this ability is unlocked after level 4. Once you can do this head to Valentine. There are usually 3 guys clustered outside the train station with big hats waiting to be shot off.
  • Kill 3 flying birds with 3 consecutive scoped rifle shots
    • Just have to be patient with your aim
  • Kill 8 small game animals with consecutive small game arrows
    • Tough because a dead eye arrow shot at a moving bird DOES NOT guarantee it will hit it. I found this easiest by traveling up and down the Dakota River shooting birds sitting still on the banks. Once they start flying, you risk missing. I would know. I had 7 and missed the last flying bird because I got greedy haha.
  • Craft a homing tomahawk, improved tomahawk, improved dynamite, and volatile fire bottle
    • Simple. If you don't have the recipes, just look them up to where to find them and ingredients. I believe one is up by the Indian Reservation
  • Catch a fish that weighs at least 19 lb.
    • If you still have legendary fish to catch, you can probably get this through those. If not, channel catfish and sturgeon are large.
  • Catch one of every species of fish.
    • Can't do this until you completed the game and it will guide you on what to catch. Just research locations and type of bait if you have any issues
  • Kill 4 enemies with 1 stick of dynamite
    • Did this by rolling up on an outlaw small camp that usually has 4 or 5 bad guys
  • Kill four enemies in a row with the same tomahawk
    • Not sure if you need to, but I got rid of my other tomahawks so I only had one in my inventory to make sure I was picking up the same one after I threw it. Actually, I don't even know if you need to through it to kill someone?
  • Kill 15 enemies using a long barrelled shotgun
    • Simple
  • Kill 9 unaware enemies from behind using the bow
    • Needs to be when they are turned around. Back of the head works. You can probably get 2 at a time when sneaking up on a bandit camp before they start shooting back.
  • Kill a grizzly bear using only throwing knives without taking damage
    • Use a poison throwing knife first then improved and just pepper that bitch. 
  • craft and use 5 special miracle tonics
    • Such a pain because you need to have 6 currant, 6 yarrow and 6 burdock for 1 tonic. Just look up the herbs location and harvest the hell out of them
  • Use Oleander to craft 6 poison weapons
    • Found in the swamp areas, they have pink flowers. I recommend making poison knives than arrows as they take up the least amount of ingredients 
  • Pick one of each species of herb
    • Make a list! As soon as you have this challenge have a list ready, because there is no way to track what you have picked. This challenge does not take into account previously picked herbs. @Truthprovided me with an awesome list under the 100% completion thread that I recommend printing and marking off.
  • Season and cook all 11 types of meat
    • Find a list and cook all the different types of meat with mint, oregano, etc. The ones that I found difficult were the crab as I didn't have any in my inventory. Head to the large tomahawk looking island on the east side of Flat Iron lake to find them. For exotic bird meat, you can get this from pelicans. Head to peninsula under Van Horn where you get the boat to go bust John out of prison. You can usually get some there.

For the Bandit Challenges...

The one to rob 5 trains,  you don't need to rob the whole train.  In the first (baggage?) car behind the passenger cars, there are no guards, and there's a can of corn or mash or something that you can steal.  Since nobody has LOS on it, nobody see's you take it.  That one item is enough to be considered robbing the train.  You can get off and get credit for one without any fuss whatsoever.  Just take a train somewhere, stay on it, steal the can, and get off.  Repeat.  I had one time I got right back on the same train and stole something else, and it gave me credit for a second train robbed, but I was unable to duplicate that, so not sure how that happened.

 

For the hogtie and leave em on the tracks, I didn't have to wait for a train to hit them, it only says to leave them on the tracks, so I guess it's enough to set and forget.

No matter what you shoot, you're gonna get accused of a crime shooting form a train.  Those damn guards can even hear the bow from 4 cars away.  I rode the train from Emerald Station, waited till a large flock of birds flew over and blasted them out of the sky.   Start at morning so you have plenty of time to ride the train and wait for the large flocks, otherwise they'll stop the train after you shoot and you'll have to find another train and go again.

I ran up to the front (after looting of course) and got the train going again. Quickly hopped out and shot down 4 birds (already had credit for 1) with time to spare. Far less frustrating than having to find another train, but I got a HUGE bounty for stopping the train in a populated area.

On the "Kill 5 Birds from a Moving Train" Challenge in sharpshooter, I have a practical solution; O'Driscolls and Lemyone Raiders routinely rob trains either south of Valentine or West of Saint Denis (South of Rhodes).  Kill the robbers, and BOOM--free empty train that you can drive up and down the tracks with out worrying about bounties.

That's how I did it--south of Rhodes, so there were TONS of birds in the air around that swamp.

Having trouble with survivalist 6. 

I've killed and skinned a deer, waited by the corpse, and

Killed a hawk that flew down to eat on the corpse.

So then I killed another deer, there was a fix that came by it, shot it while it was eating and got no credit.

Killed half a dozen bounty hunters, waited by them and shot the vultures, got no credit.

What gives?

Edit:. Guess you have to leave the area.  Rode away so the mini map was clear of course and shot another deer, got credit for that one.

This is easiest in Van Horn/against townsfolk.

Gangs seem to have a better grip on the gun.

Took me several attempts to realize THERE ARE PUDDLES ON THE TRACKS!!! You're best off riding next to them.

Was trying this one this weekend.  Van Horn Saloon is hte place to do challenges. :)  go in the saloon, shoot someone in hte head, you then have numerous people to use the knives on.

Haven't played story in a little while, but just remembered a couple things...

For the Five Finger Filet challenges, there's a button (RT/R2) you press to watch your opponent doing their turn more closely, and it shows what buttons you'll have to press when it's your turn. 

I did the first 3 games in Strawberry. I beat the first guy (easiest button combo) ran far enough away to reset the area, came back and it was the first guy again.  Made it easier than just beating 3 guys without leaving.

I didn't know these things for a while and kept failing because the button combination changes randomly each time you try again and my fingers aren't as nimble as they used to be for the more complicated ones.

I went to Thieves landing for this and discovered I was able to sneak up and shoot 2 people guarding the hideout. I was then able to run away (just enough that the hideout was off my minimap) and that forces them to respawn.

I would assume you can just do the same at one you have access to. I don't think that would work for a random camp though... I'm pretty sure they'll just chase you down.

They do, for a ways anyway, then they just stand around and when you go back to try it again they're ready for you.  I have 1 kill from last night lol, i could only find the 1 camp and that's what happened :)

Go to the fence at Emerald Ranch at night and stand on the outbuilding to the left of the barn.  Target  a headshot one of the goats in red-eye with one shot and target a few rounds into the head of a cow.  Then just ride off into the night.  There's not even a need for a bandana because there's no one around at night most of the time.

 

Easier Horseman 3 and 6

You don't need a racehorse or anything with huge stats.  I did mine with my level 4 warhorse easily enough.  Just run along the railway tracks and use the horse stimulant when the horse runs out of puff.  I've never had any problem with this apart from falling off a bridge a couple of times.  I don't think that water on the tracks is an issue at all.

For killing predators, I just used gators.  Easy to spot from a distance, there's plenty of them and they just lay there waiting to get shot in the head.  The gator eggs you find along the way is a monetary bonus.

I'm lost how this makes Horseman challenges 3 and 6 easier?  those are the timed runs.  I think you mean Horseman 8?

Yes, but you don’t need a racehorse - you can use the same horse you use for the rest of the game. I’ve yet to see a reason for having more than one horse, personally. 

You implied that these challenges can be tough, when they’re not at all. You just gallop along the tracks and try not to fall off the bridges and use stimulant when required (the only time I use stimulants is in these challenges)

So i don't loose my good horse when i go on a killing spree.  I seem to have the luck of having my horse get shot in the head when i ride through shooting everyone in site in Van Horn sometimes.  I do that with junk horse, then go get my good horse when i start playing missions and whatnot again.

Isn't there an achievement for multiple horses also?

How long while did that take you exactly ?:P I spent like 1 hour watching YT and some 150$ doing hit everytime (since sometimes you can go down like even 10 if your lucky) and never once got to three hits and a win, this is a mad challenge :O

Hours, and then a few more hours.  And hundreds of deaths of the dealer and other players and anyone left in the Van Horn Saloon lol.  Was so frustrating, i'd get 3 hits have a 19 or 20 and the dealer would almost always beat me.  

I'd just play normal until i got 2 really low cards dealt to me, then hit until i had 3 hits and cuss and swear at hte dealer a lot when he beat me.  walk away and toss a stick of dynamite on the table then go back later and try it again.

I expected it to be like what @Kormath described, but I lucked out and got it done in a couple hours (max). I put it off for a while because I truly expected that to be like 1/1000000000 odds. I was shocked when I got the first one in just a few minutes. I saved immediately, got another not too long after that. When I got the third, I almost ran out to buy lottery tickets lol

Yeah, seriously, to hell with these challenges. I was doing well until I got the the Herbalist level whatever, where it tells you to go pick one of each f*cking plant in the game. AGAIN! It is absolutely ridiculous and quite frankly not worth my time.
