I've noticed rotting boars and deer all over the map. I also just figured it was predators. Hell, a dead boar is what lead me to the easiest way to kill a panther.

I spent two hours in that swamp/forest last night and saw a total of 2 panthers.  One killed me because I was trying for a headshot after being knocked off my horse, and the second was only a one-star pelt.

Sometimes this game makes me want to smack myself in the head with a brick over how frustrating it is.

The other day I watched a panther attack and bring down a deer.  It looked almost exactly like something you would see on National Geographic.  The cat was eventually wrapped around the front of the deer, at its throat, while the deer struggled on the ground.  This gave me a perfect vantage point to shoot the cat square in the head. Which I did. Neither pelt was perfect. But it was still a two for one kill.  :)  And very cool to watch.  Glad I had a friend over to see it with me.  So, I know I didn't just dream it. lol

That's how it went for me as well. Took me like 4 hours to encounter it the first time...

It spawns south east of Braithwaite Manor. There was a pile of bones near the crossroads where I noticed a random dead boar. Figured it was the panther's feeding grounds and dropped the bait there. The rock was just across the road. Watch on your left (directly west from that rock) using eagle eye and you should spot him. You can actually drop the bait anywhere around that spot and wait.

I did go back and test this (needed more panther pelts for the trapper) and it's definitely repeatable. I've literally spent at least 8 hours in that area, this is THE BEST way to kill it (that I found).

I don't think it ever took more than a minute for me to spot it. Takes about a day to respawn after killing one.

Yesterday I was hunting and found a group of 3 bucks under a tree. It was at night and I thought they were laying down/sleeping which I thought was odd. Snuck up to them and they didn't move. Got right up to them and it allowed me to pick them up. So strange having 3 dead deer clustered together under 1 tree like they were placed there. Searched around and didn't see anything else that was odd. Just attributed it to Rockstar shenanigans

First cougar I encountered was chasing down a few deer. I should've watched it, but it made for an easy kill and made up for how much time/effort I spent on the panther.

I also found 2 wolves rolling around playing with each other. Got myself 2 perfect wolf pelts with no effort.

Came across 1 wolf eating  something while 2 were laying down nearby. I watched for a minute through binoculars (I was up on a mountain for some reason) as the 2 got up and chased off the other before returning to their free meal.

The little things like that are what make this game great.

I got lucky then.  The new tactic I've adopted is riding about twenty feet and eagle eyeing while swinging the camera around.

I also jump off my horse the moment that red blip shows up on the map.  It seems to help.

That's what i did for the panther, cept i left my horse behind.  I'd crouch-walk a few steps, then eagle eye and spin around, repeat.  I found if you crouch and the cougar pounces on you, you can throw it off if you're lucky.  I've never been able to shake it when standing.  Also the second i see the red dot on the map, i aim and hit X (square is it on PS?) to dodge.  Then turn on dead eye and spin around to shoot it in the head.  

After dying 6 or 7 times hunting the panther for the perfect hide for the satchel, this made hunting them much easier.

First cougar i encountered was eating a boar up in northern New Haven.  Only time i've seen one there, went back to that area numerous times while trying to get hunting challenge for them finished and there was nada.  I haven't been lucky enough to see a Panther attacking anything but me :)  my Arthur must be like medium rare prime rib for them.

I have more luck (when being attacked) on my horse. They knock you off instead of instantly killing you, but then the run off to circle back for the kill. This gives you just enough time to pull out a gun and line up your shot.

Anytime I've been attacked on foot, they've killed me (unless I noticed the dot)...

Seems like i hunt in game same as real life pretty much. If i'm after Elk i'll ride a horse to the area i've scoped out, then proceed on foot to track and kill.  After the kill then i'd go get the horse and ride it back to pack out the animal.  I don't usually use a horse for deer or antelope since you can pack those out on your back or use game bags in your pack.  

I've had the escape panther death from being crouched work twice, maybe 3 times.  I've been killed probably double that, maybe triple, also while crouched.  Panther is by far the hardest one to hunt.   

I'm waiting on the timer again for the legendary panther.  First time i was out hunting it and just checked the 3rd sign and got the red on the minimap from bounty hunters and the message there was too much activity.  2nd time i died, fed the panther well though.  Hopefully third time is a charm :)

My tip I quoted a few posts up has been reliable if you're interested. Took me hours to get my first one, then I figured that out. Now it takes more effort to ride over there.

Are you sure that wasn't just a "ghost"? I swear there are ghosts in this game. I haven't had anyone verify it though. Does anyone know if this is the case for some of these strange animal deaths?

This happened to me post patch, I was hunting the legendary elk near Ambarino when he suddenly dropped dead. Wasn’t there an issue where they would drop dead and not allow you to harvest their pelt? Or was it just the random death? If it is the latter, it still seems to be happening, although I have only had that one instance.
