I need some opinions here. I made mashed potatoes myself for the first time yesterday. Instead of asking my mom for her recipe, I just found a simple one online and used that. VERY simple. Mash the potatoes, throw in some milk and butter, and add salt/pepper to taste. That last part is where I need opinions.

Now, I thought these turned out f*cking awesome. I hate to say mine were better than hers, but mine were better than hers. It was very obvious that the pepper made a HUGE difference. I asked my mom why she never uses pepper in her mashed potatoes and she said" Pepper doesn't go in mashed potatoes" as if it were fact.

So I ask you, does pepper go into mashed potatoes?

Always.

I also throw some sour cream in there in place of some of the milk. Try it sometime. Even better.

Also - I like to substitute half the milk for chicken stock. A great Fall feast.

The key to making a quality mashed potato is in the mashing. Take your time, get it smooooooth.

It called for 1 cup of milk, but that sounded like a lot. I cut that down and used a little more butter instead. I didn't want to drink my mashed potatoes... My mom swaps the milk for half & half sometimes.

I never cared for cheesy mashed potatoes. I like them with corn and gravy, so the cheese makes it a little weird for me.

Base:

Whip with a hand or stand mixer 1 litre quality whipping cream (chilled) until fairly thick.

Add 1 can (the smaller ones) of chilled condensed milk. Continue whipping until super thick.

This is the same every time.

 

Then:

Add flavourings to taste. To make a simple vanilla add 3 tablespoons of quality vanilla extract. You can make any flavour you want, for instance, I add cocoa powder and homemade chocolate oreo fudge to one mix I do. Make vanilla oreo by crushing up a pack of oreos and mixing them in with the mixer, etc etc.

I can't believe I didn't remember this before!

A couple months ago, my mom made some "key lime pie". She bought ingredients for 2 though, so she gave me the rest and I made my own at home. It was alright, bu it seemed to melt down pretty quick, so I threw it in the freezer. THAT's when it got REALLY good. I actually told my mom that it came out better as ice cream than pie. It was delicious and creamy (just like any GOOD ice cream).

"What were the ingredients", you ask?

          1 can of condensed milk

          1 container of cool whip

          1/2 a bottle of key lime juice

          1 pie crust

 

Sound familiar @Benjo? Now that I've remembered this, I CAN'T WAIT FOR THIS ICE CREAM!!!

The only problem with the ice cream recipe I've had when using fruit juice is it crystalises in the freezer and makes your ice cream icy instead of creamy. The only real way around this is to use an ice cream maker to keep it moving as it freezes (stops it crystalising), so I just don't use fruit juice at all.

It may have been the consistency of the cool whip that prevented that.

Something I'll have to play around with.

Edit: Or maybe that it was in the fridge for a day or 2 beforehand?

 

Edit 2: I tried made some vanilla ice cream last night, turned out just as I expected! I wanted it a little sweeter, so I also added about 1/4 cup of powdered sugar. I tried a scoop this morning and it tastes like a klondike bar, but creamier.

I'm hungry but I don't know what to eat. I don't have a taste for anything. Does anyone get like this? It is frustrating. I must have looked in my fridge 10 times in the last 20 minutes.

I've perfected my pizza making over the last year or so. I worked at a pizzeria for over 2 years and learned a lot about it.  I found the recipe online, and tweaked it here and there and in my opinion, my pizza is just as good as any delivery pizza. I brought one to a potluck at work about a year ago, and everybody was asking where it came from. I'm really not much of a cook so it was pretty flattering for someone like me LOL For approximately $10, I can make two large homemade pizzas. I like that with a homemade pizza you can put whatever you want on it, and as much sauce or cheese or toppings as you want. You can make thin or thick crust,  and you can flavor the crust with garlic butter or whatever you like.  I might try stuffed crust sometime but it's not really my thing to be honest. I usually drop some wings which I have a recipe for the batter as well.

You can make the crust thicker, but I prefer it thin so I don't fill up on bread.

That's 16" of greasy goodness.  You're gonna need a bigger box.

Just do what I have to do when I've finished urinating — fold it and bend it as many times as you can until you can manage to fit it back in.
